Ah, Brian,
The operative word is "young wines". Older wines like your Cafaro can be killed by air pretty quickly. It really depends on the wine. My friend "O" and I had a bottle of 83 Chave the other night and it got better and better as the meal wore on. Thanks for reading! - CD

Your converse is true. I had a 1990 Cafaro Cab that was "done" by the end of the night (I liked it a lot at the beginning, though!)


So true. I work in a tasting room, and most of our wines taste much better the second day. I tell people to drink half the first time they open and come back to it the next day (or day after). And that's always a good sign the wines will age well.
